Quick Crock Pot Chili
This recipe is perfect for cooler nights and is a quick way to make dinner.
1lb ground beef
1 med. green pepper diced
1 can kidney beans – rinsed and drained
1 can diced tomatoes
2 cans Mexican stewed tomatoes
1 sm. can diced green chilis
1 sm. can whole kernel corn (I prefer no salt added)
2 cloves garlic
2 Tbsp. chili powder
1 tsp. sea salt
pepper to taste
In a skillet brown ground beef and drain. Add all ingredients except corn into a crock pot with ground beef, stirring gently to combine. Set on low heat for 6-8hrs. 30 minutes before serving add corn and stir until well mixed.
I serve mine with sour cream, shredded cheese and onions. Enjoy!
